📝 Ingredients:

For the Latkes (Potato Pancakes):

2 large russet potatoes, grated

1/2 small onion, grated

1 egg

2 tbsp all-purpose flour

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder (optional)

1/2 cup vegetable oil (for frying)

For the Toppings:

1/2 cup cream cheese (or crème fraîche)

4 oz smoked salmon, sliced

1/2 tsp sesame seeds (black & white mix)

1 tbsp fresh dill or microgreens

1/2 tsp lemon zest (optional)

For the Side Salad:

1/2 cup cherry tomatoes, halved

1/2 cucumber, sliced

1 cup mixed greens

1 tbsp olive oil

1/2 tbsp lemon juice

Salt & black pepper to taste

 

🍽️ Step by Step:

1️⃣ Prepare the Latkes:

Place grated potatoes and onion in a clean towel and squeeze out excess moisture.

In a bowl, mix potatoes, onion, egg, flour, salt, black pepper, and garlic powder.

Heat oil in a pan over medium heat. Drop spoonfuls of the mixture and flatten into patties.

Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.

 

2️⃣ Assemble the Latkes:

Spread cream cheese over each latke.

Top with slices of smoked salmon.

Sprinkle with sesame seeds, lemon zest, and fresh dill or microgreens.

 

3️⃣ Make the Side Salad:

Toss cherry tomatoes, cucumber, and mixed greens with olive oil, lemon juice, salt, and pepper.
